A Belgian-style tripel aged for 12 months in an oak barrel that previously held L’Exorciste. Cherries added at the end of maturation give it a touch of acidity and a hazy pink colour. The synergy of alcohol, wood and fruit gives this beer a lingering finish.
On the nose, it smells of wood, cherry, flowers and honey.
The foam only appears briefly and the color is very inviting, close to coppery orange with reddish highlights.
On the palate, the woody character is exceptionally pronounced and enhanced by a very pleasant floral aspect and a taste of honey.
The beer is also very fruity and tastes a lot of cherry, even reminiscent of port at times. The texture is rather syrupy and the bitterness lingers in a finish which fades rather quickly.
The acidity is perceptible but well camouflaged by the residual sugar. In addition, the alcohol makes its presence felt very well and a malty taste manifests itself alongside flavors of cookies and caramel.
As for me, I really like its originality and complexity but the sweet cherry taste and the woody side are strong and might not please all palates! It’s a different and very pleasant experience!
