For our 22nd anniversary, we’re revisiting a Palabre that was all too fleeting, yet left a lasting impression on our palates: Corne de Bois. Here, Corne de Brume embraces apple brandy before drifting into delicate notes of woody fruit. Our Scotch Ale is aged for 11 months in a freshly emptied barrel that previously held apple brandy from Verger Poméloi, bringing together our passion for spirits of all kinds. This beer is meant to be festive, celebratory, and nostalgic—perfect for marking special moments and philosophizing about the future! Notes of ripe fruit, spice, apple brandy, and a promising future.
The beer pours a deep brown and is fairly opaque. A light head of foam forms before quickly fading.
On the nose, molasses and wood are particularly prominent. The warmth of the alcohol is also present, accompanied by sweeter aromas reminiscent of chocolate brownies. Cherry and plum complete this rich, indulgent bouquet.
On the palate, brownie comes through strongly, along with roasted and slightly earthy flavours. Cherry remains present, joined by notes of alcohol that rein in the beer’s roundness. The wood is especially pronounced, likely amplified by barrels that had seen relatively little use and had previously held apple brandy from Verger Poméloi.
As the tasting progresses, the beer becomes rounder. As it warms, the flavours come together more harmoniously and its sweeter side becomes more apparent. The warmth of the alcohol remains, but integrates better with the woody, fruity, roasted and chocolate notes.
