Our wild version of Ultra Mosaika! Here, notes of resin and mandarin combine with multiple strains of yeast and Pediococcus-type lactic acid bacteria. Beneath a beautiful golden haze, intense fruity aromas rise from the glass. Barrel aging brings complexity and depth to the palate. Rather round, it finishes with a delicate acidity.
It’s a bit funny how my tasting schedule comes together. I really like to taste it for the first time, without my computer and my camera, but it is not always possible (depending on the rarity of the beer). In this case, the Wild Ultra is one of my favorites from last summer. Although I drank it a few times, when I decided to immortalize it on my site, I couldn’t find it anywhere… Oopssss… 😉
I finally managed to find one, much to my delight. Then, without really knowing why, I ended up leaving it in my fridge for a long time as if the right time never came… Until tonight!
So time for tasting!
It is through its beautiful ocher and golden color and its almost endless effervescence that I lean in for a sniff.
We smell citrus and exotic fruits. An earthy and wild scent also brings its share of complexity.
On the palate, the texture is light and sparkling. The bubbles explode bursting with lots of fruity, earthy and wild flavors. Juicy tangerine reigns supreme here. I genuinely feel like I’m biting into a fresh tangerine segment.
Wow! What delicacy and complexity in taste!
The tangy side is subtle but present (lemon mousse) and although the finish fades quickly, the beer is rather round and tasty.
Woody notes and white grapes wonderfully complete the tasting experience. All this with a slightly astringent, bitter and sweet finish. Wow!
An experience as pleasant as this summer, although slightly different according to my memory. I feel like I’m getting closer to happiness, once again.
P.S. Now I have to go looking for beers again because this was the last in a long line of planned tastings. I love having the fridge empty… So much fun exploring again! 😉
