Double-fermented with two different strains. An English yeast allows the ingredients to express themselves faithfully while leaving residual sugar that adds roundness, while a true Scotch yeast completes the fermentation, bringing it to a robust alcohol content approaching 12%. Fermented at a relatively low temperature, ester and phenol production was minimized to showcase the flavours and decidedly malty character of the style. The entire batch was aged for two months in freshly emptied brandy and Jim Beam bourbon barrels, some of which had also previously held the brewer’s legendary Maltus. This blend gives it rich woody flavours with warming notes of alcohol and vanilla. The bottle was chosen not only for its distinguished appearance, but also for its strength. It is a much heavier bottle, normally intended for champagne. Rather than applying a label that could peel or fade over the years, we chose to have it screen-printed so it would endure. We asked ourselves thousands of questions... Every choice we made was guided by the desire to offer the most unique beverage possible. We distilled all our passion for beer into this divine nectar, which we are convinced will charm you. Brewed without compromise: our Scotch Ale Impériale.
On the nose, you smell wood and caramel. A sweet and slightly spicy scent like a good aged rum. I love it!
On the palate, the texture is syrupy and the finish is long much to our delight!
Where to start? It’s a beer with a lot of body! Sweet flavors like caramel, molasses and honey first captivate our palate.
The taste is complex and well balanced! There are woody notes and flavors of roasted malt. A bit like the taste of a marshmallow toasted on the fire. The resulting bitterness perfectly balances the sweetness of the beer.
We sip this beer like a good spirit. Moreover, the high alcohol level quickly warms our body from the inside! Perfect beer to comfort us after a cross-country ski outing.
All I need is a crackling fire in the fireplace and I would be in seventh heaven! This nectar produces almost the same effect in my imagination…
