The tale goes that Mario Cyr is a fish-man who spends practically his entire life beneath the ice... He is even said to own a bistro at the bottom of the sea where he ages beer sheltered from storms. A special collaboration with Bistro Plongée Alpha. A blend of beers aged on wood and in deep water. Notes of sea air, iodine, wood, the abyss and wetsuit.
For many reasons, the Magdalen Islands are a place that I love. When I went there last year, Palabre d’un homme à la mer had unfortunately already been sold out. This year, it is with great sadness that our trip to the Islands had to be canceled.
When I saw that this beer was finally coming to me, I was beyond thrilled! And for good reason, it is the result of the meeting of two exceptional people who live on the Magdalen Islands: Mario Cyr, a great explorer and photographer of the seabed, and Élise Cornellier-Bernier, the brilliant brewmaster of À l’abri de la Tempête.
This collaboration aimed to realize a somewhat crazy dream, that of aging beer in deep water! This hard work gave birth to an immensely unique beer! A dry and tasty beer!
Initially, it is the salty taste that strikes us, then comes a bitterness that can remind us of fir trees or even juniper berries. This beer has a pleasant complexity, starting from the predominant taste of cereals, the herbaceous aspect and the woody side which balances everything.
Our palate is lulled by countless flavors including those of citrus (lime) and a unique, peaty taste. In the end, it drinks like a peaty scotch from the north, we appreciate the difference, the know-how and the unique experience.
The more I taste it, the better it is…!
