Old school double IPA barriquée

Tasting notes

Hops: Simcoe, Amarillo, Cascade, Centennial and Columbus. Aged in a neutral oak barrel.

Visually, the color is a beautiful coppery ochre and the foam becomes rather abundant.

On the nose, it smells of exotic fruit salad with a little woody and honeyed side.

On the palate, the beer is surprisingly dry for a double IPA and the texture is rather effervescent and airy.

The fruity and tropical side is enhanced by a malty taste reminiscent of butterscotch and honey. Also, citrus flavors like tangerine stand out a lot and give the beer a nice freshness!

A resinous bitterness manifests itself while being well enveloped by the residual sugar. Finally, the woody notes complete the tasting experience by adding a nice complexity without being too present.

I don’t remember ever tasting a beer like this. It’s different and really enjoyable! I want more! 😉
