Tasting notes

A Double India Pale Ale blended with a beer inoculated with Brettanomyces claussenii, then generously dry-hopped with Citra, Simcoe and Mosaic. When young, the hop character intertwines with the tropical notes of Brettanomyces. After a few months of aging, the yeast’s funky notes dominate this ever-evolving beer.

On the nose, the scents are floral, fruity in a very exotic way with a slight earthy and resinous side. Wilder aromas like leather and hay also slip into the equation.

On the palate we have exotic and juicy fruits (honeydew melon, lychee, papaya). Citrus fruits like tangerine and lime. A slightly caramelized malty side.

The bitterness that follows, very accentuated, brings another dimension.

The earthy and slightly wild side gives a boost of complexity rather foreign to most IPAs. Brett yeast play a key role in this and take this beer to another level and give it a very pleasant funky side.

It’s quite unique and extremely good!

The finish doesn’t linger too long but immediately makes you want to take another sip!
