Tasting notes

A superb barrel-aged saison made with a carefully selected blend of yeasts. This lively beer, with excellent aging potential, will charm you with its finesse, elegance and vibrancy.

About two years ago, I came across a Cheval Blanc beer that I found, quite simply, exceptional. I even remember hesitating to give it the highest rating given since the beginning of my blog.

To my knowledge, this Cheval de luxe has never been brewed again.

However, today I think I found its cousin, Daisy. An equally exceptional beer.

Le Cheval Blanc is a little Montreal gem where you rarely have to queue to get their products. However, some of their beers are among the best in Quebec. Personally, I call it the best of both worlds!

Do you want to know my thoughts on the Daisy? At this point, I hope so!

On the nose, it smells of wood, flowers, honey and lemon. A gentle spring breeze, tenderly scented.

On the palate, it is fresh, complex and delicate. Everything is harmonized in a masterful way! We taste both green fruits like apple and grapes and citrus fruits, such as lemon and lime.

This delicate nectar represents a happy blend of vinous, slightly astringent flavors and superbly balanced acidity. The woody character is pleasantly softened by a honeyed taste and enhanced with a delicate floral bitterness.

Each sip invigorates us with its freshness. And then, the tannins blend into a dry finish which leaves beautiful wild notes on the tongue.

It’s masterful craftsmanship!
