Rye Brett saison showcasing both the grain and its funky character.
I discovered Cannes de roches at the Pit Caribou pub on Rachel Street during a visit in recent months. I was really delighted with its taste so I was really happy to find it in a bottle at a retailer near us.
The color is a beautiful orange hue with beautiful ocher reflections. The slight head quickly disappears and leaves us with a fine line of bubbles on the edge of the glass.
On the nose, we smell a scent of citrus fruits such as orange and lemon and a beautiful bouquet of wild and funky aromas.
On the palate, the Brett yeasts appeal to us, first of all, with their dominant presence. The acidity is rather moderate and remains superbly well balanced. Cannes de Roches also has a taste, somewhere between herbaceous and spicy, which goes wonderfully with citrus notes.
The body remains relatively thin and there is almost a mineral character. The finish is dry and a slight astringency settles on the tongue at the end of the sip. Add rye to the equation and the result is a surprisingly refreshing, complex and flavorful beer.
I feel like the flavor profile of the beer must evolve a bit over time because I think I notice slight differences with the taste of the same beer on tap. It seems to me that the acidity is less present than in my initial tasting.
The beer I drank was bottled in February 2022.
