Tasting notes

A blend of our Saison Rustique (82%) and Leo’s Early Breakfast IPA (18%), patiently aged in barrels with a unique yeast flora. The result is a complex, dry beer with a floral, fruity and rustic bouquet.

Recently, I attended Philippe Wouters’ talk on brewing trends which took place at Siboire on Boulevard St-Laurent. The event also allowed us to taste several beers. The last beer we were served was truly my favorite of the evening. I was very happy to be able to find it in store and to be able to do an official tasting. This is the Saison Réserve by Dunham.

The nose is floral, fruity and wild. Aromas of tangerine and exotic fruits rub shoulders with earthy and woody scents. I can almost smell the field of flowers and the wet hay. 😉

On the palate, the complexity of the beer is astonishing! The slightly tangy side blends wonderfully with the flavors of citrus (tangerine, lemon) and fruit (green apples, green grapes, lychees). I even taste a hint of honey… The floral bitterness is enhanced with beautiful woody and delicately winey notes. The contribution of yeasts is perfectly balanced and contributes as much to the dry finish as to the wild aspect of the beer.

I still love it just as much! Magnificent, complex and wild beer.
